I'm sure this is going to come as a huge shock to everyone.

Brace yourselves.

Mornings around here are kind of a mess. And by "kind of" I don't mean - "oh, that's adorable that you want to dress yourself and you are wearing pink pants with a purple shirt." We're talking more of a "Why aren't you wearing pants? Whose homework is in the kitchen sink?! Shut the fridge! You had shoes YESTERDAY. Stop fighting over the sandwiches or I'll squish all of them. Just leave it on the floor, we didn't want the rest of that gallon of milk anyway. We're leaving NOW!!" kind of morning.


So usually that means that I end up making my girls ride their scooters to school because we are wayyyyyy too late to just walk. BUT...that also means that I end up returning home with 3 scooters and only my youngest child. She rides her scooter, and I ride a second one while also carrying the third scooter. As it turns out -- scootering is actually REALLY HARD!! Did you know this?! I feel so anti-social every morning because everyone passing me will wave or say "hello" and I'm all "Stop talking to me, I'm going to fall over." And forget trying to wave back -- that's a hard no.

By the time I get my fourth child to the third school of the morning... I'm pretty much spent. And also I have to clean up a giant puddle of milk in the middle of the kitchen floor. Because no one wanted to be the person that "touched it last" and had to put it in the fridge. You know... because those extra 17 steps were really going to put them over the edge.

Sometimes though... I just sit on my couch and eat cookies while looking at cookies... instead of cleaning up the milk right away. I convince myself that it will be easier if I let it dry out a little bit. But the truth is, I just really like cookies. Like these super fun unicorn cupcake cookies!!! I hope you don't hate them because you're probably going to be seeing them for basically every holiday and special occasion ever now.

How to make adorable Unicorn Cupcake Sugar Cookies


Step 1.

Outline the frosting area of the cupcake with a medium consistency icing and a #3 tip. Let dry for at least 15 minutes.

Step 2.

Fill in the center of the frosting area of the cupcake with the same white icing. Outline and fill the bottom half of the cookie with purple icing. Let dry for an hour.

Step 3.

Pipe a small unicorn horn in the center of the cupcake frosting. Pipe two small dots of white icing for the eyes. Immediately add two smaller dots of green icing and then black icing. Pipe an even tinier dot of white icing where the green and black icing meet. Let dry for at least 6-8 hours.

Step 4.

Add detail lines to the horn with the gray icing and a #1.5 tip. Paint the cheeks with watered down pink food coloring. Add remaining detail lines with a black food color marker.
