Cupcake Valentine Cookies


There is some confusion over the most depressing day of the year. It's calculated based off days away from major holidays, hours of daylight, failed resolutions, credit card bills...etc. Some think that it is the 3rd Monday of January while others think it's the first Monday in January. Basically... January is a mess. Poor thing. It never really had a chance.

Except, I have a theory. I think that MORNING PEOPLE might actually like January. See, January is really like those gray hours right before dawn. Most people are still sleeping off their Christmas parties. They walk through January wishing they could hit the snooze button for one more day before returning to work and real schedules. But those morning people are out there exercising and getting ready for spring and warm things and bright colors.

I'm not a morning person by nature. But I've decided to be a January person. I've started making Valentine's Day cookies and I'm already planning my summer vacation. My husband isn't super thrilled because apparently he doesn't understand why I need to turn the heat up to 80 and bring in extra lights so I can start thinking summer thoughts. Just wait until he comes home today and sees all the bright Luau flowers all over the place. I need more color in my life!


I'm starting my bright color binge with these fun cupcake cookies. It's the second Thursday of the month, so that means I get to snag a design from my talented cousin's blog -- Simply Pam's Creations -- to use for cookies!


1. Start by baking a heart and cupcake together. Cut out a notch in the top of the cupcake with the heart cutter and replace it with a full heart. Smoosh and bake.
2. Outline and fill the bottom part of the cupcake with white icing. Let it dry for an hour before adding color to the top.
3. Use medium consistency light blue icing to add frosting to the top of the cupcake. Immediately sprinkle lightly with sanding sugar or disco dust.
4. Fill in the heart.
5. Add scallop details on the frosting and the cupcake wrapper.
