Okay, so.... I have no idea how this happened, but apparently, it's already March!?! How did that happen? Why didn't anyone warn me? You can't just spring something like that on me and expect...actually, I have no idea what you expect. Because I will not be curing cancer, you can be sure of that. I will leave that to my more intelligent relatives and people who are in no way related to me. At all.
I had a whirlwind of great ideas when I finally came to my senses and realized that St. Patrick's Day is less than, umm, some days away. (I know when St. Patrick's Day is. I'm just not exactly sure about what day today is. Come, on -- that's NEVER happened to you?) I wanted to whip up some of those ideas real quick so I could show you, so I could be one of the cool bloggers who are totally on top of things and never forget what day it is for weeks at a time. But then I realized that whenever I try to "whip up" some cookies, they look awful. Worse than awful even. They look like badness is sugar form. Which, if you are wondering, is not good. But I can't wait to join the rush of green. So I am TOTALLY going to cheat and show you some cookies from last year. Is that okay? (Don't tell me if its not.)
(Is it just me, or was I way better at piping back when I was still in my twenties? Ahh, the good old days...) While you are gazing at these, I've got some cookie dough in the mixer and I will return with some....thing....that looks like a St. Patrick's Day cookie. Probably.
Oh, and I wanted to tell you -- I made these cookies with coconut royal icing and they were SO GOOD. Like, really good. Quite possibly my favorite combination of sugar cookie flavors to date. So...you know, think about it.

Becca -- you just add some coconut flavor to your regular ol' royal icing recipe. If your recipe uses vanilla, just switch it out for coconut. (Or any other flavor.)

Just a note...
These cookies are delish. I've been using another chocolate cookie recipe for years, but no more. The mint on top is genius-Just like the Girlscout's Thin Mints. Ummmmm. The little bit of shortening adds to the cookie's texture, making it just soft enough, but not "icky" like the mall cookies.
Just a word of advice: Make a double batch. You don't want to end up fighting with your kids over the last cookie. (Not that that would happen...)
Hi, I'm a pre-beginner in cookie decorating. Just now came around to the idea of royal icing. Was trying to use cream cheese frosting to decorate... that didn't quite work.
Anyway, I'm making buffalo cookies for some CO Buffalo fans. I need to make brown royal icing to match the chocolate cookies - do you just color it brown or use a chocolate royal icing? I'm thinking a chocolate coconut-royal icing might be good. Thanks, Jan
I usually use cocoa powder AND brown food coloring to make brown icing. And for the CU Buffalo brown... I would also use a little bit of black. It's such dark brown! And yes... chocolate coconut icing is SO GOOD! Good luck with your cookies!
